Whenever I get deep into a deadline or two or five I end up with this strong urge to cook something. And among all the things I love to cook, I love baking delicious desserts the most. This weekend, because of back to back deadlines c/o LUISS, I ended up baking a triple batch of artisan white chocolate chip cookies (a dozen taken by the neighbors) and a loaf of my special cream cheese-frosted spiced carrot cake. Because I made so much batter, I ended up making a dozen mini-cupcakes as well for our nice portiera lady downstairs. I’m grateful to be surrounded by people who eat my food.
